Tuna: A Variety of Species for a Variety of Tastes

Tuna is a noble fish that comes in many species, each with its own unique characteristics. Here's a look at the main varieties that delight food lovers:

  • Albacore (White Tuna): With its light, delicate flesh, it's often considered the “king of tunas.” This noble species is the one Groix & Nature uses in its recipes. Its fine texture and subtle flavor make it the perfect ingredient for refined culinary creations.
  • Bluefin Tuna: A noble giant of the ocean, prized for its deep red flesh, especially in sushi and sashimi for an unparalleled taste.
  • Yellowfin Tuna: Recognizable by its pink flesh and golden fins, it’s appreciated for its versatility—whether fresh or canned, it adapts to all your culinary desires.
  • Skipjack Tuna (or Striped-Belly Bonito): Small, tasty, rich in protein and omega-3, it’s ideal for spicy or bold recipes.

Groix Island: A Living Memory of Tuna Fishing

From 1863 to 1979, five canneries on the island of Groix produced the finest Albacore tuna preserves on the Atlantic coast: Romieux, Jégo, Kersaho, Orvoën, and Tristan-Calloch.

These canneries played a key role in over a century of tuna fishing history and were a source of pride for the people of Groix. So much so that the traditional rooster atop the church steeple was replaced… by a tuna!

At the start of the 20th century, Port-Tudy was the leading French tuna fishing port, and the entire island pulsed to the rhythm of Albacore tuna fishing. With over 300 sailing fishing boats called dundees, and even a fishing school, Groix became renowned for tuna fishing, with a large fleet known for venturing far offshore in search of tuna.

Albacore tuna, a true emblem of Groix Island, is at the heart of many recipes developed by Groix & Nature.
This noble fish, known for the finesse of its flesh, is sourced exclusively from Breton fishing grounds, ensuring exceptional traceability and quality. On our island-based production site, the tuna is carefully prepared and delicately smoked over beechwood in our workshop, following traditional artisanal techniques that enhance its aromas. Every step of the process reflects our commitment to highlighting local resources and offering outstanding products.
