Abalone rillettes
Groix et Nature invites you to discover through this subtle and unique recipe, the incomparable flavors of abalone.
This endemic gastropod of the island of Groix is raised by our partner Erwan Tonnerre, a passionate fish farmer, specialized in rearing abalone fed with fresh algae, harvested on the island.
For the making of our rillettes, the abalone (28%) are cooked in a parsley of shallots, garlic and parsley which brings to this exclusive recipe this taste so refined in the mouth.
Ideal on blinis or toast as an aperitif.
