INGREDIENTS
- 1 jar of Groix & Nature Mackerel Rillettes
- 1 cucumber
- 1 Smith granny apple
- 2 carrots
- 1 grenade
- 1 lime
- 5 cl of olive oil
- 1 tsp honey
- Salt, Pepper
PREPARATION
- Peel and wash the vegetables.
- Cut out the grenade.
- Cut half the apple into thin slices and set aside in lemon water.
- To make your Gaspacho, cut the cucumber and the other half of the apple and mix everything in a blender with the lime juice and its zests. Add the olive oil and season to taste. Place in the fridge.
- Cut the carrots into small cubes and fry them 3-4 min with a little olive oil and honey.
- Mix your carrots with the mackerel rillettes.
- Place your mixture in the bottom of the glasses and pour your Gaspacho over it. Garnish with some pomegranate seeds and 2 thin slices of apples for decoration.
