Verrines of Mackerel Rillettes and its Gaspacho

INGREDIENTS 

  • 1 jar of Groix & Nature Mackerel Rillettes
  • 1 cucumber
  • 1 Smith granny apple
  • 2 carrots
  • 1 grenade
  • 1 lime
  • 5 cl of olive oil
  • 1 tsp honey
  • Salt, Pepper 

PREPARATION

  1. Peel and wash the vegetables.
  2. Cut out the grenade.
  3. Cut half the apple into thin slices and set aside in lemon water. 
  4. To make your Gaspacho, cut the cucumber and the other half of the apple and mix everything in a blender with the lime juice and its zests. Add the olive oil and season to taste. Place in the fridge.
  5. Cut the carrots into small cubes and fry them 3-4 min with a little olive oil and honey.
  6. Mix your carrots with the mackerel rillettes.
  7. Place your mixture in the bottom of the glasses and pour your Gaspacho over it. Garnish with some pomegranate seeds and 2 thin slices of apples for decoration.
