Tuna Mimosa Eggs

A great classic of French starters, given a twist with our White Germon Tuna. Simple, quick and always delicious.

Method

  1. Boil the eggs in a saucepan of water for 10 minutes. Drain, then plunge into cold water to stop the cooking and make peeling easier.
  2. Peel the eggs and cut them in half lengthwise.
  3. Gently remove the yolks and set the whites aside.
  4. Drain the White Germon Tuna Fillet and flake it with a fork.
  5. Mash the egg yolks with a fork and mix them with the flaked tuna, mayonnaise and mustard, until you get a smooth, creamy texture.
  6. Season with salt and pepper, then generously fill each egg white with this mixture using a spoon or a piping bag for a neater presentation.
  7. Sprinkle with chopped chives and a pinch of paprika before serving chilled.
