Marmite de Bar flavoured with Lobster Oil

  • 900 g sea bass fillets
  • Onions
  • Cloves of garlic
  • 50 g butter
  • 1.5 kg potatoes
  • olive oil
  • Espelette pepper
  • Parsley
  • Groix & Nature Lobster Oil
  1. Dice the potatoes, finely chop the onions and mince the garlic.
  2. Put the butter in a casserole dish and add the onions and garlic. Leave on a high heat for 10 minutes, stirring constantly.
  3. Add the potatoes and season to taste. Bring to the boil and cook over a low heat, covered, for 30 minutes.
  4. Pan-fry the sea bass with olive oil and season.
  5. Place the sea bass fillets on the surface of the pot and cook over low heat, uncovered, for 5 minutes. Stir in the Espelette pepper and chopped parsley.
  6. Transfer the potatoes to soup plates, arrange the sea bass fillet in the center and add a dash of Lobster Oil around the fish. Serve immediately.
