Marmite de Bar flavoured with Lobster Oil

- 900 g sea bass fillets
- Onions
- Cloves of garlic
- 50 g butter
- 1.5 kg potatoes
- olive oil
- Espelette pepper
- Parsley
- Groix & Nature Lobster Oil
- Dice the potatoes, finely chop the onions and mince the garlic.
- Put the butter in a casserole dish and add the onions and garlic. Leave on a high heat for 10 minutes, stirring constantly.
- Add the potatoes and season to taste. Bring to the boil and cook over a low heat, covered, for 30 minutes.
- Pan-fry the sea bass with olive oil and season.
- Place the sea bass fillets on the surface of the pot and cook over low heat, uncovered, for 5 minutes. Stir in the Espelette pepper and chopped parsley.
- Transfer the potatoes to soup plates, arrange the sea bass fillet in the center and add a dash of Lobster Oil around the fish. Serve immediately.
