INGREDIENTS

  • 1.5 kg of crab (about 3 pieces)
  • 200 g of sausage meat
  • 2 heads of garlic
  • Parsley
  • 1 shallot
  • 50 g of hard bread
  • 20 cl milk
  • 15 cl of Lobster Oil
  • 4 carrots
  • 1 leek
  • 2 courgettes
  • Butter
  • Salt, Pepper

      PREPARATION

      1. Cook your crab for 10 min in a large volume of salt water, bring to a boil.
      2. Collect the flesh of your crabs, keep 2 shells and clean them.
      3. In a saucepan, put your crab flesh with Lobster Oil and simmer over very low heat for 5 min.

      Prepare your stuffing

      1. Chop the shallot, chop the parsley and garlic. Put the hard bread to soak in the milk and chop it as well. Mix everything together. Add sausage flesh, salt, pepper.
      2. Julienne with carrots, leek and zucchini.
      3. In a hot pan, melt a knob of butter with a little Lobster Oil. Add the julienne of vegetables, salt and pepper and cook for 10 min covered.
      4. Meanwhile, fill the crab shells with your stuffing and crab flesh candied with Lobster Oil on top. Bake at 160°C for 15 min.

      Dressage

      In two plates, place your stuffed crabs and add the julienne of vegetables on top with a little chopped parsley to decorate. Serve hot.
