Summer seafood aperitif: 6 original and delicious recipes

Craving a seaside aperitif that stands out this summer? We're putting our ocean products centre stage, lifted with a touch of summer freshness, for recipes that are briny, generous and full of character. Here are 6 ideas to try right away.

  • Fresh White Germon Tuna Verrine with Watermelon & Feta

In a small glass, layer well-chilled watermelon cubes, flakes of Plain White Germon Tuna Fillet and a few cubes of feta. A surprising sweet-and-savoury pairing, perfect for a terrace aperitif.

Chef's tip: a few chopped fresh mint leaves for extra freshness.

  • Buckwheat Maki Roll with Salmon Rillettes

Spread a thin, warm buckwheat pancake and top it with our Scottish Salmon Rillettes, then sprinkle with fresh dill. Roll tightly maki-style, then slice into rounds once cooled.

Chef's tip: chill for 10 minutes before slicing for clean, neat rounds.

  • Crispy Toast with Seaweed Tartare, Cherry Tomatoes & Burrata

On a slice of toasted bread, spread our Organic Seaweed Tartare. Add halved multicoloured cherry tomatoes and a creamy burrata heart. A generous, briny toast to enjoy in the sun.

Chef's tip: a few drops of our lobster oil add a refined, ocean-inspired finishing touch.

  • Cucumber Rounds with Mackerel Rillettes

Cut the cucumber into thick rounds and top each one with a generous spoonful of our Sichuan Pepper Mackerel Rillettes. Add a mint leaf. Fresh, light and ready in minutes, no bread needed.

Chef's tip: keep chilled until serving, for maximum freshness in every bite.

  • Gratinéed Scallop Shells with Breton-Style Scallop Rillettes

Fill real small scallop shells (cleaned) with our Breton-Style Scallop Rillettes, sprinkle with a little breadcrumb and grated cheese, then grill for a few minutes until golden. Serve hot, straight from the shell with a small spoon.

Chef's tip: a splash of lemon just before serving brightens the whole dish.

  • Buckwheat Toast with Espelette Pepper Sardine Rillettes

On a lightly toasted slice of buckwheat bread, generously spread our Espelette Pepper Sardine Rillettes. Add a few thin radish slices for crunch.

Chef's tip: a turn of the pepper mill just before serving.

Seaside Aperitifs: A Seasonal Affair

Our fish rillettes, seaweed tartares and culinary oils are the true stars of this seaside aperitif; a few touches of summer freshness (herbs, citrus, crunchy vegetables) simply bring them to life, without ever overshadowing them. Three or four recipes are enough to put together a beautiful summer platter, best enjoyed in the shade of a terrace.
