At Groix & Nature, we have chosen traditional beechwood smoking to bring out the full richness of mackerel. Carried out in our production workshop on the island of Groix, beechwood smoking is a traditional craft that we master with precision.
Our mackerel are smoked using a gentle process that respects the fish's texture while imparting a subtly woody flavor. This technique concentrates the aromas, preserves the natural tenderness of the flesh, and enhances its mouthfeel.
Our mackerel fillets are smoked over beechwood in our workshop on the island of Groix, giving the recipe such an authentic taste.
This low-temperature smoking also stabilizes the fish without drying it out, preserving all its gustatory qualities. The result: rillettes with an intense flavor, tender and balanced texture, reflecting the full character of this beloved fish.
