Cooking
20 minutes
180 g flour
1 sachet of baking powder
3 eggs
10 cl whole milk
6 cl olive oil
60 g plain cream cheese
1 lemon
Chives
40 g grated Parmesan
Salt & pepper
PREPARATION
- Beat the eggs in a bowl. Add the flour and baking powder, then season with salt and pepper.
- Add the milk, olive oil and cream cheese. Mix until you obtain a smooth batter.
- Add the finely chopped shallot, chives, Parmesan and a little lemon zest. Mix gently.
- Butter the muffin tins. Place a first layer of batter in the tins, filling them to about one third of their height.
- Using a piping bag, place a generous dollop of Groix & Nature Scottish Salmon Rillettes in the centre of each muffin, making sure to position it in the middle of the batter.
- Carefully cover with the remaining batter until the tins are three-quarters full, so that the rillettes are completely enclosed in the centre.
- Bake at 180°C for 20 minutes, until the muffins are lightly golden.
- Leave to cool for a few minutes before removing from the tins. When served, the rillettes heart will be revealed in the centre of the muffin.
SERVING
Arrange the muffins on a nice plate or wooden board, leaving a little space between each one. Serve warm or at room temperature to highlight their soft texture and generous salmon filling.
