Frittata with Organic Seaweed Tartare

Original and full of character, this recipe puts a new spin on an Italian classic with a typically Breton coastal twist. Easy to prepare, it offers an explosion of seafood flavours, making it ideal for a light meal or a gourmet starter.

  1. Finely slice the onion and the leek, then cook them for a few minutes in a drizzle of olive oil with salt and pepper.
  2. In a bowl, beat the eggs then add the Organic Seaweed Tartare, the cooked vegetables, the fresh cream, salt and pepper. Mix well.
  3. Pour the preparation into a mold or a dish lined with baking paper.
  4. Bake at 180°C for about 25 minutes, until the frittata is nicely golden.
  5. Let cool slightly, then cut into portions.
  6. Serve with Italian dry-cured ham, some fresh basil leaves and lemon zests.
